| Potato cakes with fried egg and hollandaise
Lightly beat 1 egg in a large bowl, add the potato, spring onion, salt and pepper, then combine. Sift in flour and baking powder and mix together - use your hands towards the end to combine well - until you have a sticky dough. Place dough on a lightly floured board and roll out until about 1cm thick. Use a 10cm scone cutter to cut out 4 cakes. Pat a little flour on both sides of each cake and refrigerate for 10 minutes. Heat the olive oil in a large frypan with a lid (don't cover yet) over medium heat, add the potato cakes and fry for 2-3 minutes on each side until golden brown, then remove and set aside. Return pan to the heat, place 4 egg rings in the pan and crack an egg into each. Cover the pan with lid and cook for 2 minutes or until cooked to your liking. Sit a potato pancake on each plate and top with a fried egg.

Equi-librium gets $5300 from Red Robin opening
Lehigh Valley Restaurant Group, a franchisee of Red Robin Gourmet Burgers Inc., Red Robin, celebrated the grand opening of its Stroudsburg location by raising $5,300 for Equi-librium, a therapeutic horse riding program for children, youth and adults with physical, developmental and emotional challenges. The Stroudsburg Red Robin restaurant is located at 250 Crossroads Mall, near Kohl's and Loew's stores. Lehigh Valley Restaurant Group owns and operates 13 additional Red Robin restaurants in Pennsylvania, including two locations in Allentown. As part of the restaurant company's ongoing commitment to its local communities, the Stroudsburg restaurant donated proceeds from its Sneak Preview Days, Wednesday, March 28, to Saturday, March 31, to Equi-librium. The organization will use the funds to help support its operational costs.

OUTDOORS REPORT
Penny Yemans of the Texas City Dike Light Pier reported steady fishing lately with the warmer temperatures. Bull redfish and over-sized black drum remain constants, and more sharks are beginning to show. Those fishing for panfish have taken lots of whiting, sand trout and croakers. A few speckled trout have been taken on live shrimp, including a five-pounder. Matagorda Guide Mark Talasek reported fair fishing on the south shoreline of West Matagorda Bay on live shrimp and dark-colored TTF Flats Minnows. Redfish are showing in Oyster Lake and Crab Lake on shrimp. Some redfish, trout, sheepshead and whiting are showing at the jetty pier on live bait. Sam Rayburn Black bass are fair on Senkos, lizards and jigs in 4-12 feet of water. Some spawning action has occurred and some bass remain on beds.
