The Feasterville store offers new-school and old-school candy. There are the gourmet chocolate-covered pretzels with toppings such as Oreo-cookie crumbles, but there are also Mallo Cups, Necco Wafers, and the wax bottles with the juice inside. The candy shop stocks sweets that cost between 10 cents and $24, the price tag for a pound of chocolate truffles. There is creamy homemade fudge made by co-owner Tracey Laiken that is decadently rich, and a wide variety of nuts, plain and roasted. There's more: Snacks by the lb.'s inventory goes beyond the sweet. There are greeting cards, gifts, candles, balloons, and jewelry made by Laiken, who studied glassblowing in Italy.

In honor of our first chef-focused issue of QSR, we queried chefs inside the industry and out about what might replace the chipotle pepper as the next big ingredient in foodservice; which world/ethnic cuisine would most influence quick-service kitchens; which flavor trends stood a chance in the limited-service market; and which gourmet cooking technique was most likely to trickle down. The response we received contained common threads—Latin and Asian cuisine, sous vide, and braising. But there were some unique takes, too: references to sea salt, cherries, figs, and pestos. The Beach Gourmet: Sham: 1001 Arabian Flavors
Authentic Mediterranean and Middle Eastern food is something of a needle in a haystack in this part of the world, given that most restaurants have a tendency to "Americanize" this style of cooking, and oftentimes lose the culinary integrity in the process. So when I recently visited Sham restaurant, it was with a little apprehension, to say the least. Upon entering, the décor immediately screamed "authentic," with beautiful tiles, keyhole arches and quite the most alluring and colossal imported chandelier that one could imagine. The owners have definitely caressed the walls of this establishment with their own cultural character. My friend and I decided to feast a little from the many dishes, as this is often the custom, and the appetizers just sounded so good that I did not want to leave thinking, "I wonder what the falafels were like." Of course the hummus (mashed garbanzo beans with tahineh and other spices, $4.50) was obligatory, and their homemade sample was traditional and smooth.

The daughter of Bailey's Auto Repair owner Keith Bailey, Kerri wanted to offer her hometown something that, to her knowledge, it had always lacked. The Marshall graduate wanted to open a specialty wine store, and with her father as co-owner, she did just that.Bailey turned the former Adecco staffing service storefront at Beckley Crossing into a store that offers 55 types of microbrews, imports and craft beers, and a huge wine selection that ranges from hard-to-find imports to local favorites.
Pork wrapped in pancakes is tasty fun
This month I'm trying a version of classic Chinese dish. Mu-shi Jon is a pork preparation, wrapped in pancakes. It is fairly easy to make, although the pancakes can be a bit of a challenge. You can always purchase the pancakes from a Chinese restaurant and then just make your fusion Mu-Shi Jon. Making this at home is very tasty and fun. Mu-shi jon Egg and Pork with Pancakes 14 pound pork loin, slightly marbled, thinly sliced against the grain 1 generous T. cottonseed oil 1 T. Chinese rice wine or dry sherry. 2 ounces sliced shitake mushrooms 2 cups chicken stock 4 well-beaten eggs 3 long scallions, chopped 1 T.
